Om vinen

Et besøg i Spanien i 1998 blev startskuddet til denne spændende Vermouth. De ældre landsbyboere drak den serveret med is og citron og undertiden toppet med danskvand. Smagen er utrolig forfriskende med en enorm kompleks aroma og smag. MERWUT er en fin urte-vermouth men i en mere subtil stil, hvorved man kan genkende de ekstraordinære kvaliteter af basisvinen. MERWUT laves på en base af Pinot Blanc og Pinot Gris, og urter som malurt og andre forskellige medicinske urter. Efterfølgende tilføjes brandy fra husets eget destillat af basisvin samt sukker. En mere spændende og unik aperitif findes næppe! Farven er smuk dybt gul. Næsen er fyldt med tørrede frugter som appelsin, appelsinskal, abrikos, rosenblade. Hertil kommer tørrede medicinske urter som ingefær, lakrids og engleurt. Smagen gengiver de fine urter som findes i næsen men den fylder virkelig munden med sin vilde lakrids, karamel og nærmest sorte te intensitet! Prøv den med is, appelsin og danskvand! Since 1998 I have been busy in Spain vinifiyng wines in Aragon at Bodega Venta d´Aubert. During occasional visits to several local bars - some being cultural and society institutions, prominently in rural areas - it always struck me in particular that the eldest villagers invariably drank a strange dark brownish colour liquid…

After 10 years of having my suspicions in tasting this rather dubious beverage, in addition to seeing some of the Spaniards drinking other doubtful beverages, such as strange pickled rootstocks in alcohol, I finally took the courage and ordered a glass. Well, lo and behold! Served on ice and lemon, sometimes topped up with soda water, it tasted refreshingly invigorating with an unbelievable intensity and diversity of tastes and aromas.

Dominated by herbaceous with distinctive caramel flavours. I truly liked the style of this beverage which, in turn, immediately prompted me to create and produce a Vermouth (MERWUT) in a more subtle style, whereby you can recognise the extraordinary qualities of the base wine.

For my MERWUT, I use a base wine of full ripe grapes, having the variety of Pinot Blanc and Pinot Gris and, over a period of many months, macerate herbs like wormwood Artemisia absinthium, together with various other medicinal herbs, adding brandy from my own base wines and sugar. With five years of combined MERWUT production and self-experiments, my recipe is now optimized…..and may just be perfect!

I produce only one MERWUT - life is complicated enough - so I focus exceptionally on this style, namely, neither sweet nor dry, neither white nor red, neither extremely bitter nor too soft. A beautiful amber colour, in the nose it smells like dried fruits, caramel, orange, toffee, dried medicinal herbs like ginger, liquorice, angelica. In the taste, as you´ll notice, the same flavours are experienced as in the nose, some caramel, liquorice, dried fruit, truly mouth filling, strong yet smooth. MERWUT, that´s it!
